I'm also a former palm user. I have had a number of Palm OS devices starting with the original US Robotics Palm through the Handspring days and finally to Treo. I still have my Treo phone but have migrated all my other stuff to my iPod Touch. No iPhone available on the only halfway decent cell network in my area.

Contacts are the standard Mac address book,
Ditto for Calendar
Note taking and general reference stuff is in DEVONTHink and DTToGo. I tried Evernote but ditched it quickly and no Yojimbo on the iPhone. DT is much more powerful with a fairly steep learning curve and the iPod/iPhone app is still very new with some rather rough edges, esp. syncing
I also use 1Password on both mac and iPod to keep all my various passwords in sync.
