Actually in the paid version, for each of the 8 destination buttons you can specify whether you want EITHER the recognized text (from Google's Voice to Text engine) OR the audio file sent.

Further, when there is no internet connection, the app will record the audio file and queue it for later delivery when a connection is again available. However, this will not queue it for subsequent voice-to-text, just send the attached audio file.
