I filter my task view so as to only show items which are NOT completed. Go to your task view, and then select View/Arrange by/Current view/Cutomise current view/Filter. Then on the Advanced tab, select Field/Frequently-used fields/Complete, then select the Condition field to 'equals' and the Value field to 'No'. Then hit 'Add to List', and finally Ok/Ok.
You should now only see the uncompleted tasks in your list. Remember that the others will still exist and take up space in you Mailbox so you'll need to delete the manually from time to time.

I may not have made myself clear. I want them to disappear in the "Outlook Today" view, not the "task" view. I was able to figure that out.

Right click on the TaskPad header in the Outlook Today view, and select Customize Current View... from the context menu.
Apparently I'm not understanding you.When I right click on the Tasks heading nothing happens.
Any way you could do a screen shot where I can see what you're talking about.
Or any other suggestion.

James, I don't think that this is possible. You can see all available options of the Today view by clicking on the Customize Outlook Today (I have Outlook 2007 installed). Unfortunately, the only option that I see there, is to see only Today's tasks. And it still shows completed tasks for today...
My OUTLOOK TODAY (2003) is customized to
Today's Tasks Only
Include Tasks with no Date
My completed Tasks show crossed out for Today only. Tomorrow the crossed out ones disappear until I complete one or more.

John_Hammond and jerendeb are correct; Outlook Today does not have an option to not show tasks you completed today. They will show as crossed off until the next day.
